Here are some recipes for 4 persons

< <<<<<<<< Cucumber Juice >>>>>>>> (for 1)

1 Cucumber (cut it into half or quarter)
2 stalks Celery
2 Apples
3 slices of Ginger (Optional)

Put all the vege into a juicer to sequeeze and serve immediately

< <<<<< Cucumber garlic salad >>>>>>>>>

4 cucumbers
2 cloves of garlic (finely chopped)
2 teaspoon salt (for massage)
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon sesame oil
1 tablespoon rice vinegar
some roasted white sesame

1) Put the cucumbers into a plastic bag with salt, massage the cucumber for a while, set a side for 5 min
2) Wash the salt away, cut the cucumbers in 1.5 inches long or in big cubes, put them in a salad bowl
3) Mix the vinegar, sugar, salt, sesame oil in a dressing bowl then mix the cucumbers with the garlic
4) Sprinkle the roasted sesame before you serve

< <<<<<<< Cucumber sandwich >>>>>>>>>>

cucumber (sliced 3 – 4 inches in length with about 3 mm thick)
150 g cream cheese
1 mango (chopped)
2 tablespoon of sour cream

1) Whip the cream cheese, sour cream, mango together until the mixture is smooth
2) Spread the mixture on a piece of bread (any kind you like)
3) Put the cucumber slices on the mixture, sandwich it with another piece of bread

< <<<<<<<<<< Cucumber Spaghetti >>>>>>>>>>>>

500 g Spaghetti (boiled)
4 Cucumber (cut into 1 inch cubes)
2 cloves of garlic (chopped)
60 g basil leaves (chopped)
30 g pine nuts
100 cc EV Olive Oil
6 Black Olive (pitted, sliced)
1/2 cup grated parmesan cheese
1/4 cup freshly grated gruyere cheese
salt
black pepper (optional)

1) Put the basil leaves, pine nuts, garlic, salt, EV olive oil into the blender, blend into paste
2) Boiled the Spaghetti with a pinch of salt in a large pot, drained and cool a bit
3) Mix the Spaghetti with the basil paste, parmesan cheese, cucumber, black olive in a big bowl

Option for 3) If you like it to be served warm, you can heat a frying pan with low heat, add some olive oil in the pan and mix the spaghetti with the parmesan cheese is slightly melted, turn off the heat, serve the spaghetti in a big bowl wait a big when it get cooler, then mix it well with cucumber and black olive

4) Sprinkle the freshly grated gruyere cheese and black pepper on top when serve

(if you like seafood, you may add boiled prawns and mix it into your pasta)

< <<<<<<< cucumber sobert >>>>>>>>

400 g cucumber (chopped)
50 g mint / peppermint (finely chopped)
100 g icing sugar
350 cc fresh cream
1 fresh lime juice
1 zest of lime
honey (optional)

Put all the ingredients (execpt the fresh cream) into a blender, blend well, then add the fresh cream into the mixture and blend till it is smooth (do not blend the mixture too hard)

Pour the mixture into an ice-cream maker, follow the instruction of your machine. Chill for a day or so.

If you do not have an ice-cream maker, use lime sorbert instead of fresh cream, omit the lime juice but mix the cucumber / peppermint puree well with lime sorbert + lime zest and chill for a few hours

Perhaps you would like to have some seafood to serve your guests. Cucumber match nicely with baby squids or prawns or scallops

< <<<<<<< Cucumber & Scallops Salad >>>>>>>>>

200 g of lettuce leaves (any kind but real fresh ones)
4 cucumbers (cut into cubes)
10 cherry tomatoes (cut into half)
400 g Scallops
2 tablespoon of white wine or cooking wine
2 tablespoon of extra vrigin olive oil
2 tablespoon of balsamic vinegar
salt
black pepper (freshly grounded)

Salad Dressing :

1/2 lemon juice
1/2 teaspoon of sugar
2 tablespoon of extra vrigin Olive oil
3 tablespoon of balsamic vinegar

1) Wash the scallops, boil some water in a sauce pan and put the scallops into the hot water to wash for 2 or 3 seconds, drain and try well. Marinate the scallops with 2 tablespoon of white wine and some salt for 10 minutes (drain and set aside)
2) Heat a frying pan with high heat, add 2 tablespoon of olive oil into the pan, stir fry the scallop quickly for 30 seconds or 1 minute (depends on how hot your stove is), add 2 tablespoon of balsamic vinegar into the pan and stir fry quickly for another till the scallops are cooked (thicken the sauce!), do not over cooked them.
3) Mix the cucumber / lettuce leaves with salad dressing in a salad bowl then pour it on the plate
4) Put the scallops on top of the salad then granish it with cherry tomatoes
5) Add black pepper when serve (optional)
